Pressure Cooker Caramelized Onion Soup Stock

A much easier option than the method I described in Asian Shiitake Soup:
Works with carrots / sweet potatoes too, but keep the cooking at pressure time down to about 25 minutes.

Equipment: Pressure cooker
Ingredients:
1 KG onions, sliced
1 t. baking soda
1 t. salt
splash of olive oil

Put all ingredients in the pressure cooker.
Give the pot a good shake every 30 seconds or so until the contents get sloshy.
Keep at pressure for about 45 minutes.
